Okay, so I have failed to live up to my word of one recipe per month…I really am sorry about that! Life and business is just so hectic at the moment until I forget some of the “little things.” Here is a super, duper, quick and easy meal for supper.
1 pound of white chicken cooked and cubed or pulled (fresh or frozen is okay)
1 package of regular chili seasoning mix
1 can of white kidney beans
1 can of mexicorn, undrained
1 can of petite diced tomatoes
1 can of water (use the empty tomato can)
1 can of chicken broth
1 chicken bullion
Literally dump it all together and bring to a boil then reduce heat and simmer on low for about 45 minutes to an hour…just to “come together.” If your chicken is freshly cooked (not frozen) I wouldn’t add it until the last 15-20 minutes…just to keep it from drying out.
Fill your bowl and top it off with shredded cheese (whatever kind you like) a dollop of sour cream and fresh green onions. Scoop it up with some tortilla chips or Fritos. Yummy! : )
