I just wanted to wish y’all a Happy Thanksgiving! I hope that you spend the day relaxing with people that you love and acknowledging things that you have to be grateful for. I am grateful for each of you who took the time to “check in on me” this day. I write for y’all and without your participation in my Blog what fun would it be? I certainly enjoy writing and it is nice to know that y’all enjoy reading. ;-)
I hope that your Thanksgiving table is overflowing with yummy treats today! Go ahead and get a second helping…heck make it thirds!!! I am!!! : )
And as my holiday gift to you…here is the recipe to one of my all time favorite dishes! Sweet Potato Soufflé.
Sweet Potato Soufflé
From the kitchen of Dawn McCarthy
Filling:
• 3 cups of cooked mashed sweet potatoes
• 1 cup of sugar
• 1 ½ teaspoons of vanilla
• ½ stick softened butter
• 3 beaten eggs
Topping:
• 1 cup brown sugar
• 1/3 cup melted butter
• 1 cup pecans
• 3/4 cup flaked coconut
Mix mashed (still hot) sweet potatoes, butter, vanilla and sugar thoroughly. Add in 1/3 of the beaten eggs to temper. Now add the rest of your eggs. Place filling in a greased dish.
Combine brown sugar and butter. Lastly, add pecans & coconut. Crumble topping over the top of the filling. Bake at 350* for 35-45 minutes or until golden brown. Enjoy!

Yummy! My mom makes hers the same way minus the coconut. She puts marshmellows on top and melts them until they crisp a little, so yummy! My favorite thanksgiving dish, besides the Turkey and dressing! Happy Thanksgiving to you and your family too Dawn!
Happy Thanksgiving Dawn! I’m sure your sweet potatoes are yummy, but I’m doing my Grandmothers recipe and I challenge you to a throw-down any day! Mine are SCRUMPTIOUS!!!
Mmm…i used that same exact recipe except mine called for 2 eggs. It was my first time making sweet potato casserole but it turned out soo yummy!! I used marshmellos not coconut, i’ll have to try it your way at christmas :) Thanks Dawn, hope your thanksgiving was AWESOME!
